Baked Potato Slices with Chipotle Onion Dip
I made these the other night with the Spicy Garlic Cauliflower Bites and we practically inhaled them! They’re inexpensive, easy, and completely addicting! I don’t even watch football and I’m considering throwing a Super Bowl Party next month just as an excuse to make them again!

Ingredients:
2 medium potatoes, sliced ¼ of an inch thick
1 package shredded cheddar jack cheese
4 strips of lightly peppered bacon, cooked and crumbled into small chunks
2 stalks green onion, finely chopped
Chipotle Dip:
½ cup sour cream
¼ cup mayo
1 Tbs Tattooed Martha’s Homemade Taco Seasoning
1 tsp onion powder
Preheat oven to 375 degrees F, cover a large baking pan with foil, and lightly grease with butter or cooking spray.
Bring a large pot of salted water to a boil. (1.) Slice potatoes into ¼ of an inch thick slices and add to water. Reduce heat to a medium setting and cover pot with a lid. Let potatoes cook for about 5 minutes. (2.) Remove from heat, drain, and place potato slices on paper towels to dry a few minutes. (3.) Arrange slices on prepared baking sheet and top with shredded cheese. (4.) Add crumbled bacon and green onion and then place in the oven.
Bake for approximately 15 minutes or until cheese starts to lightly brown.
While waiting for the potato slices to bake, prepare your dip!
In a small bowl, combine dip ingredients. Stir until well blended and set aside or place in the refrigerator for later use.
When potato slices are done baking, remove from the oven and let cool for a few minutes before serving.
Now just try to stop yourself from devouring all of them before serving!
