There’s something about imitation crab that just really creeps me out! It’s like the SPAM of seafood. I don’t want to eat something POSING as crab.. I want to eat real crab! Rather than splurge on the real stuff or take the gamble with faux crab, I decided to skip it altogether! Instead I added diced jalapeño and green onion to make vegetarian friendly “crab” rangoon! Not only did they taste just as delicious as crab rangoon from a restaurant, but they were so much healthier! Ditch the mystery meat and try them for yourself!

Ingredients:
Olive oil for pan
1 (8oz) package of light cream cheese, softened
½ cup mayonnaise
2 green onion stalks, thinly sliced
Half of a jalapeño, finely chopped (remove seeds and ribs for a milder taste)
1 garlic clove, minced
1 ½ tsp soy sauce
¼ tsp ground ginger
1 egg
1 Tbs water
20-24 wonton wrappers
Preheat oven to 350 degrees F (176 degrees C), line a baking sheet with foil, and drizzle with olive oil.
In a medium sized bowl, combine, cream cheese, mayonnaise, green onion, jalapeño, garlic, soy sauce, and ginger.
(1.) Stir until completely mixed. (2.) Whisk together egg and water. Using your finger, dip into the egg wash and run a line around all of the top edges of a wonton. Place a spoonful of the cream cheese mixture into the center of the wonton. (3.) Pinch together two opposing corners. (4.) Fold up the remaining two sides and pinch together with your fingers, sealing up any gaps.
Place finished wonton on prepared baking sheet and repeat with remaining mixture.
Place wontons in the oven to bake for 10-12 minutes or until the edges turn golden brown. Keep an eye on them towards the end of baking. Some might start to burst open. A little is okay, but you don’t want your entire mixture left on the pan instead of in the wonton!
When finished baking, remove from the oven and let cool a few minutes. THIS IS IMPORTANT! I definitely burned the hell out of my mouth because I was too impatient and decided to bite into one right away.. Scorched taste buds are just no fun at all, so WAIT!
Serve with soy sauce or sweet and sour sauce.
