I’ll be the first to admit it.. I only watch the Superbowl as an excuse to indulge in a lot of food and beer! Don’t be upset with me football fans! Its sporting events like the Superbowl that inspire me to create delicious concoctions like this one! As soon as this came out of the oven, I quickly dug in and devoured nearly half of it in a matter of minutes. Despite burning the hell out of my mouth due to my impatience, it really did taste like a bacon wrapped jalapeño popper in dip form! Whether you’re a sports fanatic or you just do it for the food.. this is a must-make recipe for any get-together!

Ingredients:
8oz cream cheese, softened
4oz (1 cup) pepper jack cheese, shredded
1 cup sour cream
1 large jalapeño, finely diced (remove seeds as well for a milder taste)
6-7 strips of bacon, cooked until crispy and crumbled into small chunks
Salt and pepper to taste
1-2 Tbs parmesan cheese
¼ cup panko bread crumbs

Preheat oven to 400 degrees F (204 degrees C).
(1.) Combine cream cheese, pepper jack, sour cream, diced jalapeño, and bacon crumbles in a large bowl. (2.) Season with salt and pepper and mix until all ingredients are incorporated together. (3.) Spoon mixture into a small baking dish (1 quart) and smooth the top. Sprinkle parmesan cheese and panko bread crumbs across the top. (4.) Place in the oven to bake for 25-30 minutes or until bread crumbs start to turn a golden brown.
Allow dip to cool for a few minutes before serving (unlike I did). Serve with crackers or tortilla chips.
